I am a BIG lover of summer, the warm sun, the sunny and lazy days, casual get togethers with friends and family. But once the cooler days arrive, and I force myself to realize that the hot days of summer are behind us for another year, I look forward to the cool crisp days and savoury cooking that fall brings.
I wanted to try a pumpkin spice flavored icing and couldn’t decide what flavor cupcake to pair it with. So I decided to make my own recipe. Haha. I think vanilla or chocolate cupcakes would taste just as good, or wherever your imagination and your taste buds take you!
I decide I wanted to try a pumpkin and oatmeal flavored cupcake. I basically just tweaked a recipe I already use. That’s a little tip, think outside the box a bit, tweak a recipe you already make, you might be surprised at how well it turns out! 😉
For the cupcakes the recipe is as follows from https://sps.edu.jo/slot-gacor/:
Pre heat oven to 350 degrees.
In a large bowl, or stand mixer, combine:
- 2 cups all purpose flour
- 1 cup of oats (ground in a food processor to closely resemble flour)
- 1 cup sugar
- 1 Tablespoon baking powder
- 1/2 teaspoon of salt
Then, in another bowl, or large liquid measuring cup, combine:
- 1 small container of 36% whipping cream (about 1 cup)
- 1/2 cup of oil
- 2 whole eggs ( I used 2, but next time I’m going to try 3)
- 1 Tablespoon of vanilla
- Heaping tsp of cinnamon
- 1 cup of canned pure pumpkin (not the pie filling)
- 1/4 cup of water (see below) *
Mix the liquid ingredients with a whisk until combined, then add to the dry ingredients.
Mix batter with hand mixer or stand mixer until combined.
Then add 1/4 to 1/2 cup of water to the mixture. ( I used 1/4 ) *
Bake for 20-25 min. Until toothpick inserted in center comes out clean.
Remember to NOT open the oven door as the cupcakes are baking. This will cause them to become flatter. Use the oven light to check on them instead. Once the sides of the cupcakes pull away from the sides of the pan slightly, then it’s ok to open the oven door (if you need to).
